Cocoa Aronia Bars
For 4 bars:
6 dry plums
70 g almonds
1/4 tsp. baking powder
1 tsp. cacao powder
4 tbsp. coconut blossom sugar
1 tsp. olive oil
8o g aronia berries (alternative blueberries)
1/4 tsp. agar agar
50 g chocolate
Soak plums in 2 tbsp hot water for 30 minutes.
Puree them and mix with almonds, baking powder, cocoa powder, 2 tbsp coconut blossom sugar and olive oil.
Roll out the dough into an 8 x 8 cm square, then cut into 4 pieces. Bake on a lightly greased baking tray and oven at 180°C /356° F for 15 minutes. Allow to cool.
For the aronia berries, heat 2 tbsp. of coconut blossom sugar and add the berries. Caramelize 50 ml of water. Roughly puree and mix agar agar. Allow to cool slightly and spread on the cookie dough.
Cut the chocolate in pieces and melt in a stainless steel bowl over hot water. Spread on the bars and sprinkle with some chopped nuts.
