Fennel-wild herbs-pomegranate salad

This salad wants to invite you to invite the first wild herbs of the year in your kitchen and create a mandala with them.

vegan, glutenfree, sugarfree

  • 1 fennel, cut into paper-thin slices
    seeds of ½ pomegranate
    1 handful of arugula and a handful of very first green herbs (lesser celandine, dandelion, goutweed)
    1 apple, cut into very thin slices
    2 tablespoons of toasted sesame seeds
  • For the dressing:
    3 tablespoons olive oil
    1 tablespoon agave syrup
    1 shallot, finely diced
    1 tsp. mustard
    1 tsp almond paste
    2 tbsp. lemon juice
    Mix all ingredients
  1. Spread all ingredients on a platter and drizzle with dressing.
