  • 300 g green peas (frozen)
    1 lime, ½ of the peel finely grated
    1 clove of garlic, finely chopped (or 2 leaves of wild garlic)
    1 pinch ground cumin seeds
    2-3 tbsp. olive oil
    3-4 tablespoons apple juice
    6-8 leaves dandelion
    4-5 leaves mint
    1 tablespoon pink pepper berries
  • Boil peas in boiling salted water for 3 minutes, then rinse with cold water. Finely puree peas, lime juice, garlic, cumin, olive oil, salt, apple juice and pepper.
    Mix in lime zest. Spread on a platter and sprinkle with chopped herbs. Sprinkle pink pepper on top.
